Grilling: Preheat your grill to 500°F. Season your tuna filets generously with salt and pepper. Grill the fillets for 30 to 60 seconds per side. This yields a tuna steak that is seared on the outside but still raw on the inside.
Pan-searing: Heat oil in a pan over high heat. Pat your tuna filets with a paper towel to dry the surface. Season the filets with salt and pepper. Place the filets in the pan and sear for 30 seconds to 1 minute without moving them. Flip the filets and sear the other side for another 30 seconds to 1 minute.
