Pan-searing: Heat oil in a pan over high heat. Pat your cobia with a paper towel to remove moisture from the surface. Place the cobia in the pan and cook for a total of 3 to 7 minutes, flipping halfway through. When cooked, the flesh should be opaque white.
The most striking aspect of a fresh gulf cobia's flavor is its rich butteriness. But despite that buttery flavor, cobia is a surprisingly light fish. It does not have the overpowering "fishy" flavor that many people dislike, and it is also quite juicy even though its flesh is on the firmer side. Overall, fresh gulf cobia is a lot like Mahi or tuna and goes well with the sweetness of mango and other fruits.
Eating fresh gulf cobia benefits your heart and brain since it is an excellent source of omega-3 fatty acids. Along with that, cobia also contains a long list of nutrients that includes riboflavin, niacin, vitamin B6, magnesium, potassium, and vitamin D. Gulf cobia is also low in fat while providing plenty of protein in each serving.
